Red wine production
The main raw material for the production of red wine is black grapes whose pigments, located in the peel of berries, and give such a color.
Harvested grapes are crushed, and all the resulting mass (including pits and peel) is infused with a certain time. In the process of maceration (this is what infusion is called), the peel saturates juice with color, aroma and taste.
Maceration follows fermentation, which usually lasts 4-10 days. Natural yeast located on the grapes, or added specially grown.
Then red wine soaked, decanted and filtered, after which the process begins ripening and aging, which can last up to five years.
